Restaurant Seat & Table Management: RevPASH, Table Turns, Party-Size Mix, Reservations vs Walk-Ins, No-Shows & Floor-Plan Optimisation

Earn more from the seats you already have. You will measure revenue per available seat hour, seat occupancy and table turns by daypart, match table sizes to party sizes, set reservation slot lengths, handle no-shows and walk-ins and test a new floor plan, all with fictional restaurants and every cell checked as you go.

What you'll build

What you will be able to do

Each lab ends with a concrete result that you build yourself and the checker confirms, cell by cell.

  • Turn a covers log into covers and seat hours used, sum them by daypart with SUMIFS, compare them with the available seat hours and find the seat occupancy of each daypart and of the whole day.
  • Calculate RevPASH for six evenings, build a day × hour RevPASH grid with AVERAGEIFS and mixed references, find the Saturday average check and turn the grid into a heat map.
  • Turn seated and left times into dining minutes, count the turns per table size with COUNTIF, find the average duration of parties of 4 and the covers per seat of one dinner service.
  • Give every party size the smallest table that fits with XLOOKUP, count the seats offered and left empty, measure the seat efficiency of the week and the share of small parties that the floor plan has to serve.
  • Look up the slot length for a party size in a policy table, count with INT how many full bookings fit into the service window per table, add up the bookable parties and flag overlapping bookings on one table.
  • Pool the no-show rate of eight Saturdays, measure how much of the room walk-ins fill, work out how many covers can be booked for a full room and the expected number of guests turned away when you overbook.
  • Compare the current floor plan with a scenario of more 2-tops: parties served per table class with MIN, extra larger parties seated at joined 2-tops, and the change in RevPASH for the same 64 seats.
  • Build the weekly daypart dashboard: available seat hours, RevPASH and seat occupancy, a status against the RevPASH target with IFS, the weakest daypart with INDEX/MATCH and a chart of RevPASH by daypart.

About this course

Two restaurants with the same takings can use their seats very differently. This course shows you how to measure and improve the one that fills seats poorly. Using a fictional restaurant, you calculate available seat hours and occupancy by daypart, then revenue per available seat hour by day and hour. Dining duration and table turns by party size come next, and you compare the party-size mix with your table sizes to find empty seats. Reservation slot lengths determine how many bookings fit an evening, no-show rates guide overbooking, and walk-ins fill the gaps. Floor plans with two-tops, four-tops and combinable tables are tested, and a dashboard highlights the weakest hours. For restaurant owners, managers and hospitality students.
