Food Science Calculations: Shelf Life, Q10, Water Activity & Microbial Growth
First-order quality loss from ln C vs time, shelf life to a quality limit, Q10 and accelerated shelf-life testing, the Arrhenius plot and activation energy, water activity from a sorption table, microbial growth with lag and doubling time, D, z and F0 thermal lethality, and a shelf-life report with a chart: 8 graded labs on one fictional food maker. Illustrative data, not food-safety guidance.

What you'll build
What you will be able to do
Each lab ends with a concrete result that you build yourself and the checker confirms, cell by cell.
- Fit the vitamin C loss of Brightfield orange juice stored at 25 °C: take ln C, find the rate constant k as the negative SLOPE, the half-life, and plot the straight line.
- Turn the rate constants into a shelf life: days until vitamin C reaches the label claim, days until browning is rejected, the attribute that fails first and a labelled shelf life with a safety margin.
- Take the rate constants measured in a hot accelerated test, calculate Q10 and predict k and the shelf life at chilled and ambient storage temperatures.
- Turn four rate constants of the juice into an Arrhenius plot: kelvin, 1/T and ln k, the slope, the activation energy Ea and a predicted k at 20 °C from the fitted line.
- Convert the moisture of Brightfield crackers to dry basis, look up their water activity in a sorption table, find the critical moisture for crispness and the days until the pack lets in enough water to soften them.
- Model spoilage bacteria in a Brightfield ready meal held at 8 °C: log counts, the specific growth rate from the doubling time, the time to reach the spoilage limit and a log-count table with a lag phase.
- Check the sterilisation of a Brightfield canned soup from its cold-spot temperature log: lethal rates, the F0 value by the general method, the log reductions and the D-value at a lower temperature.
- Pull the course together for the product file: k and the shelf life at 4, 20 and 30 °C, a weekly prediction table for a year and a line chart against the label claim.
About this course
Shelf-life claims rest on kinetics, and this course takes you through the calculations used in product development. From quality measurements over time you fit first-order loss, find the rate constant and half-life, and compare zero- and first-order models to identify the limiting attribute. Accelerated tests at higher temperatures are translated to storage conditions with Q10, and an Arrhenius plot yields activation energy and predicted rates. Water activity is linked to moisture through a sorption table to estimate packaging shelf life. Microbial growth is modelled with lag phase and doubling time, thermal processes with D and z values, lethal rates and F0, and a final report predicts vitamin C at three temperatures. For food science students and product developers; not a safety validation.

Questions about this course
Is this a subscription?
No. You pay $9.99 once for this course. There is no subscription and nothing renews automatically. Prices are in US dollars; taxes may be added where required.
What exactly do I get?
All lessons and labs of this course, the final exam and the certificate, including later updates to the course, for as long as Tutorvo offers it. Access is personal and tied to your account.
Can I get a refund?
Yes. If you are not satisfied, email hello@tutorvo.com within 14 days of buying and we refund the course in full via Stripe. The guarantee does not apply once a certificate for the course has been issued to you, or where there are signs of abuse.
When can I start?
Right after payment. Access starts immediately at your request; for consumers in the EU/EEA the statutory right of withdrawal therefore ends once access has begun, while our 14-day money-back guarantee applies regardless.
Do I need Excel or other software?
No. The labs run in a spreadsheet inside your browser on a laptop, tablet or phone. Function names and syntax follow Excel.
Is the certificate an official qualification?
No. It confirms that you completed all lessons of the course and passed its final exam. It is not an official, state-recognised or professional qualification. The name is taken from your profile when the certificate is issued.
